Chocolate Chip, Cranberry, Pecan Cookies with Duck Eggs
WE LIKE THAT THESE COOKIES ARE NOT OVERLY SWEET.
Ingredients
1 cup butter, softened 1 cup sugar 2 ducks eggs ( you can use chicken eggs if you want but if they aren't XL use 3 instead) 1 teaspoon vanilla extract 2-1/4 cups all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt 1-1/2 cups semisweet chocolate chips 1-1/2 cups dried cranberries 3/4 cup chopped pecans
Directions
In a large bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine the flour, baking powder and salt; gradually add to the creamed mixture and mix well. Stir in chocolate chips, cranberries and pecans (dough will be stiff). Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten slightly. Bake at 350° for 20 minutes (check after 10 minutes as different ovens cook differently), or until set and edges are lightly browned. Rotate the cookie sheet when you check after 10 minutes. Cool for 2 minutes before removing to wire racks.
