Homemade Pasta with Duck Eggs


Ingredients

3/4 cup Semolina Flour to each Duck Egg
have a little water on hand in the event the dough is too dry and isn't coming together.

Pour flour onto cutting board in a mound and make a well in the middle. Crack eggs into the well and using a fork slowly pull little bits of the flour in to combine with egg. Try to not break through the wall of flour before enough egg and flour have combined so your egg will not run all over the place.

Once combine, knead for 10 minutes. You may need to dust your hands with a bit more semolina in the event the dough is too sticky.

Form the dough into a disc. Wrap in plastic and allow to sit at least 30 minutes at room temp or in the fridge for up to a couple days.

MAKING THE PASTA WITH A PASTA MAKER

Unwrap the disc and cut disc into 4 pie shape pieces. Remove one and wrap the remaining dough back up tightly in the plastic wrap so it doesn't dry out. Form the dough into an oblong shape and begin feeding it through the pasta maker starting on setting #1.Ffold it into thirds lengthwise and feed it through still on #1 again and repeat folding and putting it through #1a third time. Then feed it through #2, #3, #4, #5 and #6 dusting with a bit of floor if it begins to stick. If the dough becomes too long to easily handle simply cut it in half.

Now switch to the cutter part of the pasta maker feeding the sheets through the chosen cutter. Hang pasta on a rack or make little nests out of it, leaving it to set at least 30 minutes or up to 2 hours at room temp.

CUTTING PASTA BY HAND

If you do not have a pasta maker roll the dough out on a floured cutting board until 1-2 mm thick. Cut into 5" wide segments and roll loosely into flat rolls. Use a pizza cutter or sharp knife the cut the pasta into the desired width of noodle. Hang to dry or place on a flour dusted cookie sheet.

TO COOK THE PASTA

In a large stockpot bring water to a boil. Add the pasta and immediately stir so the pasta doesn't stick together. Fresh pasta takes much less time to cook so it should only take about 1 1/2 minutes.

If you do not use all of your fresh pasta you can store it in the fridge for a couple days in an airtight container of in the freezer for a couple days.

Now of course you can use chicken eggs instead but Duck Eggs have a larger yolk than chicken eggs, Therefore they provide a higher ratio of yolk to egg white. The egg yolks of duck eggs also tend to be tihcker and richer in flavor than chicken eggs.
