Baked Omelette



4-5 servings
Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch casserole dish and set aside.


6 Duck eggs or 8 Large/XL Chicken eggs
1 cup of milk
1/2 teaspoon of salt
3 ounces of cooked ham or bacon
3/4 cup of cheddar cheese
1/4 cup cheddar cheese, reserved for after baking
1/4 cup parmesan cheese
2 T. chopped fresh herbs
1/8 cup chopped chives (save for after baking)


Beat together the eggs and milk add salt. Pour into prepared casserole dish. Slowly sprinkle the ham/bacon, cheeses and herbs on the top.

Bake uncovered at 350 degrees F (175 degrees C) for 40 to 45 minutes or until the edges barely start to brown. Remove from oven, carefully sprinkle the 1/4 cup of reserved cheddar on top with the chopped chives. Serve immediately.

Using either eggs will give you a delicious omelette. The duck eggs give the omelette a fluffy richness.
